Finally graduated today!!!! Long awaited day had arrived!!! I am a diploma holder nowww!! ^^

Food Updates of May 2013

1. Kim's Place @ Joo Chiat
- Is a semi-aircon and outdoor restaurant
- We find that its standard have dropped this time round

 



2. A Tze Char Stall @ Changi Village Hawker Centre
- First time try this tze char stall, my ahma love eating from this stall
- Reasonable price and foods are being served quite fast



3. Wimbly Lu @ Jalan Riang
- A hidden find, a hidden find!!(Even went there twice in a week)
- Located among terrace houses near Serangoon area
- A cosy, relax cafe with nice decorations
- Will spend about $12 per person
- Tried their root beer cake, chocolate lava cake (my fav!!), mocha, coffee,
waffles with salted caramel icecream, carrot cake, chocolate cake












3. Thai Express @ Tiong Bahru Plaza
- Fresh ingredients used therefore quite pricey
- First time tried their famous coconut otah, green curry, thai chicken wings



4. Jumbo Seafood @ East Coast
- Ate their 10 dishes set for Mother's Day
- Expensive due to festive season
- However, foods are nice and fresh




5. Ubin Seafood @ Changi Village 
- Mother's Day Dinner at this seafood place
- Food was not too bad but quite spicy for me
- Service ain't that good




6. Alfresco Gusto Italian Bistro @ ION Orchard
- Went there to celebrate our early monthsary,
since we both ain't working on a weekday
- Outdoor and Indoor Sitting available
- Service is good and fast & foods are almost-fantasic
- Food are able to come one by one, which is very good
- Able to sit down and relax and not being rush








7. Ichiban Boshi @ NEX
- Went there to celebrate sis's bday
- Crowded and long queue during dinner time
- Find the food is about average, not very nice and expensive



8. Ramen Champion @ T3
- Second time trying this restaurant
- They will give you a card to use it to buy food and then,
you pay the bill when you are leaving the restaurant
- Tried Miso Special Ramen, don't really like it because it is too oily




9. Sushi Tei @ Serangoon Gardens
- Went there to celebrate Godpa's Bday
- I like their salad sesame's dressing, very refreshing
- Other items are average



10. 8 Degree Taiwanese Bistro @ Teck Chye Terrace
- I like the food in this bistro, especially the milk tea and salted chicken!!
- Price quite pricey though for the chicken




11. Two Fat Men @ East Coast Road
- Love the foods being served here too!
- Nice thai tea, burger, pork neck, seabass!! All these are their popular dishes!
- Prices are reasonable too








12. The Daily Scoop @ Sunset Way
- A mini cafe at Clementi Area
- Chocolate Icecream is good, thick enough.
- Waffles and Coffee are so-so
- Nice scenery over there


 





13. Spizza @ Bedok Simpang
- Western, Chinese & Malay Foods being served
- Foods are goods and service are fast


Lemon Coconut Cupcakes Recipe



Serves 15

Ingredients:
For Cupcakes:
3/4 cup butter, softened
1 cup sugar
3 eggs
3 teaspoons grated lemon peel
1/2 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sour cream
1/2 cup flaked coconut

For Lemon Coconut Frosting:
4 ounces cream cheese, softened
2 tablespoons butter, softened
1 teaspoon grated lemon peel
1/4 teaspoon vanilla extract
1/4 teaspoon lemon juice
1-1/4 cups confectioners' sugar
3/4 cup flaked coconut, divided
Shredded lemon peel, optional

Method:
1. In a electric mixer bowl, cream butter and sugar till light and fluffy.
2. Add in the eggs, one at a time. Beat in lemon peel and vanilla.
3. Combine flour, baking powder, baking soda and salt.
4. Add to the creamed mixture alternately with sour cream. Beat until combined.
5. Fold in coconut.
6. Fill cupcakes casing with batter till 3/4 full.
7. Bake at 175 Degree Celsius for 20 minutes or until a toothpick inserted in the middle of the cupcakes come out clean.
8. Cool for 10 minutes before removing pan to wire racks to cool completely.
9. In a electric mixer bowl, beat the cream cheese, butter, grated lemon peel, vanilla and lemon juice until fluffy. Gradually beat in icing sugar until smooth, stir in 1/4 cup of coconut.
10. Frost cupcakes, sprinkle with remaining coconut and lemon peel.

Ginger Lemon Cake Recipe


*we garnished it with fruits though

Serves 10-12 people

Ingredients:
1 tbsp plus 2 sticks of butter, room temperature
1 1/4 cups granulated sugar
2 tsp grated fresh lemon zest
2 tsp grated fresh ginger
4 eggs, lightly beaten
1/2 tsp salt
2 cups all purpose flour

Method:
1. Pre-heat oven to 160 Degree Celsius.
2. Put 1/4 cup of sugar in a bowl, add lemon zest and ginger. Massage all together with your fingers.
3. Beat the 2 sticks of butter in a mixer on medium-high speed for 1 minute.
4. Add ginger-lemon sugar and beat for a few seconds before adding the remaining 1 cup of sugar. Beat for    2 minutes, until light and fluffy.
5. Lower the mixer speed and drizzle in eggs and salt. Beat on medium-high speed for 2 more minutes. Slow mixer to stir and scrape the sides of the bowl.
6. Add half the flour, mix 15 seconds before adding the remaining flour.
7. Pour batter into pan. Bake for 1 hour until a toothpick come out clean when being inserted into the middle of the cake.
8. Cool the cake in the pan on a rack for 15 minutes before loosening the sides with a knife.

So Blessed

A little story to share; Thankful and grateful for God's Plan for my life

Looking back at all the choices I had made in life. One of the crucial decision is to choose my diploma course 3 years ago which would affect my future.

Choosing a diploma which most people think that it's not much of a use for my future in the end. At first, I would also like to go with the crowd and my friends, a business diploma. Luckily, my cousin managed to give me a wise suggestion 'Why choose a diploma that is so common and have so many competitors in the working world.' This totally hit me and I thought it through, I choose to go into Food Science and Nutrition in TP. I chose this course because I love Biology and F&N in my Secondary School. 3 years in this Diploma had taught me quite a lot about Food Science as I had also choose this as my elective in Year 2.

Now upon completion of my diploma and waiting for my Graduation in 21 May 2013. Next choice to make, my degree. I myself decided to not take a new degree and build up my foundation again. And I know I am not the business kind. However, the only two universities that have Food Science and Technology Degree which are NUS and Massey. Hence, I applied for NTU (Science), NIE and Massey. I got a call from Massey for an interview soon after I sent in my application. God open door. So elated. I felt that I did not really done well for it though, but Im holding on to that faith of mine.

Days went by, and Im anxious about my further studies. And on 3 May, I finally received a call from Massey!!!! *heart dropped moment* Telling me that I had been given an offer to their degree for this year intake and asking me whether I would like to accept their offer etc!!! Of course I did accept the offer which I had been praying hard for. And the good things of this degree are that it is a 2 year degree that is affordable financially for me and is recognised by MOE so if in the future I want to be a teacher, I could still.

Thank God so much for answering those prayers. Much deep thinking recently, and I think this is the plan that I should go and which God directs. So so blessed. All glory and praise to You O God!!

And earthly father in heaven, I will do you proud.
