Banana Cake with Cream Cheese Frosting Recipe

Sorry for not posting for quite awhile due to studies! I've completed my 6 semesters/3 years of my polytechnic studies!! Now, I'm left with Graduation Ceremony which  is on the 21st May.

Okay, so this post I will blog about the Banana Cake with Cream Cheese Frosting Recipe.

Serves 15

Banana Cake's Ingredients:
140g butter
355g white sugar
2& 1/2 eggs
8ml vanilla extract
310g all purpose/plain flour
6g baking soda
1g salt
295 buttermilk
8ml lemon juice
280g mashed ripe bananas

Method:
1. Preheat oven to 135 Degree Celsius. Grease a 9x13 inch pan.
2. Weigh banana and mash them with a fork. Add in lemon juice and mix. Set qside.
3. Weigh buttermilk in a small bowl. Set aside.
4. In a medium bowl, weigh flour, baking soda, salt. Sieve and set aside.
5. In a bowl, weigh butter and sugar. Cream till light and fluffy.
6. Beat in egg one at a time, then stir in vanilla extract.
7. Beat in flour mixture alternately with buttermilk.
8. Stir in banana mixture. Pour batter into prepared pan.
9. Bake in preheated oven for 1 hour and 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
10. Remove from oven and cool it on a cooling rack.

Cream Cheese Frosting's Ingredients:
95g butter, softened
185g cream cheese, softened
350 confectioners' sugar
4ml vanilla extract

Method:
1. In a bowl, weigh butter and cream cheese. Cream till smooth.
2. Beat in vanilla extract.
3. Add in confectioners sugar and beat on low speed until combined, then on high until frosting is smooth.
4. Spread on cooled cake.
